There was another impressive sunrise this morning in the land of weightingfor50.
I took the photo above on my way to meet Michelle, her famous hand and her reading glasses for pre-work coffee today.
I had breakfast at my desk. It was two pieces of Little Big Bread with 2 tbsp light cream cheese and 2 oz smoked salmon. (there was a sale on the “trim” at the grocery store. Doesn’t look pretty, but it tastes good) I’ve also been drinking cucumber water all day. (ug. ALL day…lets just say I probably earned an activity point or two visiting the ladies room a zillion times today. You’re MOST welcome for that TMI moment!
)
Later on in the morning I had this cup of fruit salad.
Here comes the “late to the party” bit. Seems I’m late to all kinds of blog parties, where someone starts making something and it snowballs and bounces from blog to blog. The party I missed? Cauliflower Pizza Crust/breadsticks. I’ve seen this for MONTHS, and finally gave it a try yesterday. There are a boatload of blogs with this recipe (or a form of this recipe) posted, and I’d love to give them ALL credit, but recipe on the The Edible Mosaic is the one I followed. Here is what it looked like last night when I pulled it out of the oven. (I had a couple of pieces while it was warm)

…and here it is with the leftover roasted vegetable ratatouille with light feta that accompanied it.
The verdict on the cauliflower crust? SOOOOO good. I loved it, Dennis loved it, Neva snubbed it but hey, two outta three ain’t bad! Joking aside, this is so worth trying. I’m going to make another crust soon and we’ll have it with pizza toppings. Thanks to ALL the bloggers who made it and inspired me to try it (many months after most!)
During the afternoon, I had some cucumber (not floating in my glasses of water) and a small apple.
I had to walk to the grocery store after work. As you can see in this photo, the rain stayed away and the sun looked SO pretty on the mountains.
It’s very odd that the power lines look “broken” in this shot, as they look “solid” on my viewer. Hmm… Broken or solid, they’re not attractive, but are everywhere along the corridor of W. Broadway. This artwork is on a building that is behind the spot I took the photo. As you can see, more power lines…
When we got home, Dennis and I shared a ginger beer. I had the little glass, Dennis had the foamy one.
I also had a couple more squares of the cauliflower “bread”.
Dinner tonight was pork tenderloin cooked in President’s Choice Blue menu plum sauce mixed with bbq sauce, some steamed green beans and carrots and 1/8 cup brown rice (leftover from my risotto venture earlier in the week)
Your turn….hands up if you’ve tried the cauliflower crust/bread. What did you think? Any hints as to varying seasonings that you’ve tried. I’m all “ears”. HA!! Get it??? (and not to make light of those with REAL cauliflower ears!)

I’ve never had cauliflower crust. I love this idea. My boyfriends adores cauliflower so I foresee this as a real winner!

I’ll have to try your version of the cauliflower crust. It’s been a couple years since I’ve tried it, and while I was hoping you could pick it up with your hands and eat it like pizza, it was a knife and fork pizza – yours definitely looks “firmer” than mine did!
I love the Stella glass – I have the same one. Whenever we go somewhere and its on tap, I get one – one of my favorite beers!
