When I woke up and looked out the window today, I had high hopes for not only a sunny, warm walk to work, but maybe a warm lunchtime walk too, and then again when I walk home.
Turned out one outta three was all I could hope for. I saw signs of spring this morning….
…but when I went out at lunchtime it was cloudy and freakin’ cold, so I didn’t go far….
…and by tonight. POURING rain. Ug.
Oh well, I’m still convinced spring is right around the corner. In the meantime, yay for gloves and umbrellas!
Michelle and I are meeting tomorrow instead of our usual Wednesday, so no famous hand today. It’ll be back tomorrow though!
Before I left for work, I had a smoothie made with almond milk, a banana and some frozen strawberries.
And when I got to work, I had the contents of my bento box, 1/2 cup greek yogurt, kiwi, blueberries, leftover cooked blueberries from Sunday’s brunch and 1 tbsp gingerbread granola. (ack…this “crack in a bag” won’t be back until next Christmas, and I’m about half way through the bag. Oh well, I’ll enjoy it while it lasts, and pout for the rest of the year. Kidding…)
Lunch was roasted vegetable ratatouille that I made last night. (I roasted eggplant, zucchini, onion and red pepper – then stirred it into puree tomato and added italian seasoning, garlic, a “slug” of balsamic and some fresh basil) The ratatouille was topped with light feta, I had a mini naan bread and an apple too.
I had some cucumber, celery and carrots during the afternoon.
Dinner tonight was leftover pumpkin risotto from last night with steamed broccoli.
I’m off now to try a new recipe. Will report back tomorrow if it turns out. (well, I’ll report back if it DOESN’T too, but that’s beside the point…)
