Just a quick menu recap post tonight.
Breakfast this morning was a “Roz McMuffin” – a slightly overtoasted english muffin with 2 egg whites, a piece of ham and some spinach.
I had a cup of blueberries and 1/2 cup greek yogurt with a whole press of coffee during the morning.

Lunch was a salad made with arugula, spinach, roasted beet, orange, fennel, fresh mint, light feta and olives topped with my fat free balsamic dressing.
I felt like I needed a little “something” so got a Skinny Cow wafer from the store. It was 3 points of “hit the spot”.
Later in the afternoon I had a small apple and 1 tbsp peanut butter.
When I got home, I made chicken noodle soup from the stock and ends from the Sunday roasted chicken.
Dennis and I had 1/2 cup each in ramekins, to check “quality control”. It passed.
Dinner was baked pork tenderloin (in bbq sauce, sugar free peach jam and soy sauce) with roasted vegetables and I had a sliced pear on the side.
I’m off to prep for tomorrow. I MAY have some banana soft serve in a while, but you all know what that looks like so I’ll just hit publish and say good night. Good night.

I thought you called that sammie a MUFF! I could eat that breakfast sammie every day and not get sick of it.
