I was out and about getting groceries today, and I saw this sign on the street.  It cracked me up.

Who’s with me, lets all be unicorns on Monday!  And not just ANY unicorns….badass unicorns! :) (thank you Google Images for the inspiration of badass-ed-ness!)

Before I got the idea to be a badass unicorn, I made us scrambled eggs, back bacon, little big bread (that I topped with Trader Joe’s fig butter) and an almond milk latte.

After my errands and a visit with Helen, I had leftover carrot/yam soup that I’d made the other day with corn crackers, an oz of firm goat cheese and an apple.

I also made some chai tea with almond milk.  I found some new chai teabags, made with black tea, green tea and spices.  It had been FAR too long since we’ve had chai.

I ate some kale chips with popcorn seasoning while I spent the rest of the afternoon in the kitchen prepping for the next few days.

You’ll be seeing most of the “fruits of my labour” over the next few days.  However, just to share…I made split pea soup with ham, 2 loaves of low-fat banana bread, I roasted a chicken and some vegetables, and there is chicken broth simmering at the moment with the stripped carcass.  We had the breasts of the chicken for dinner.  I sliced it and made chicken gravy (I admit, from a mix), brown rice with pomegranate and lemon zest, and steamed green beans.

I also made some banana soft serve with frozen peaches and strawberries.  I sprinkled a tsp maple flakes on top just for some texture.

That’s a wrap on the last weekend in January.  I’m off to prep for the week, and get ready to be a badass unicorn!  :)
