The ancient mysteries have been revealed. And this is where the term “The Great White Hunter” comes from!
Yup….slow news day here at Weightingfor50. (and as I type this, I’m reminded I really have to get my thinking and creativity caps on and think of a new name for this blog. Hmm. Or do I? Hmmm to that too.)
ANYWAY….here is a quick recap of the day’s point friendly (and if I may say so myself, colorful) menu.
Breakfast was a parfait made with blueberries, pomegranate, greek yogurt and 1 tbsp gingerbread granola.
During the morning I had this orange. WARNING: OVERACTIVE IMAGINATION ALERT! (which in this photo looks like a fruity stagecoach (with invisible horses) being driven by the koala. Giddyup! Don’t say I didn’t warn you!

Lunch was a salad with arugula, chopped endive, a roasted beet, some roasted butternut squash and pear, more pomegranate, light feta and dressing that I made with apple cider vinegar, olive oil, dijon mustard and honey. The reason I had roasted butternut squash and pear was because I made the soup last night that I had as part of my lunch today. It’s based on a recipe that I found in the weight watchers power foods cookbook. I tweaked it by changing the spices, adding some fresh lemon juice and greek yogurt instead of low-fat sour cream. I’ll post the recipe tomorrow.
During the afternoon, I had some celery sticks, and a new to Canada Skinny Cow wafer bar.
I thought I was going to be working a little later than I was, which was a nice surprise. When I got home, I had a few of this new flavour of Pop Chips.
Dinner was tacos with fixings. Dennis had his in the shell, I just made mine into a salad.
Last night after I posted, I made some banana soft serve. (I just wanted a little “something”) Tonight, I made another bowlful, with a frozen banana and frozen strawberries whirled in.
That’s Monday. Laundry is calling….more tomorrow.

I may have mentioned it before but I have the same little koala that you have!
Neva is hilarious. Ben’s brother’s cat Pumpkin used to be obsessed with my stuff whenever I came over. He’d chew (eek) on the handles of my purse and then sit on top of my shoes whenever I was there. Silly cats!
