Some may call us goofy, but Dennis and I felt a need to celebrate today. It was 3 years ago today that we adopted Neva from the pound. And what better way to celebrate than a party.
More on that in a sec….I’ll just quickly recap my point friendly meals before the celebration. I actually didn’t eat much during the day. I had a bagel thin with 1 tbsp light cream cheese and 1/4 avocado this morning.
I had taken a lunch today, but when lunchtime came, I just wasn’t hungry. Weird. Later in the afternoon, I had a honeycrisp apple and a tbsp peanut butter.
And I have to share this photo. These roses were sent to one of my co-workers today, and I was asked to take a photo to email to the sender. So pretty.
Then, the tongue-in-cheek celebration began. Two of her (and our) favorite people, Cousin Helen and our friend Anna (who has taken care of Neva when we’ve been away) joined us. As you can see, party hats were mandatory.
Neva didn’t quite get the concept of wearing the hat on her head. She enjoyed chewing the elastic, had no problem with it on her face, but didn’t do well with the actual wearing.
But enough hat wearing. We started out with hummus and smoked eggplant with rice crackers.
We toasted with a glass of wine.
Dinner was roasted pork tenderloin baked in a plum/bbq/soy sauce combo, brown rice, steamed carrots and a salad based on one of Gina’s Skinny Taste salads. Gina put blood orange and blue cheese on endive, I put normal oranges, pomegranate seeds, black olives, fresh mint and light feta with an oil and vinegar dressing.
We had a chocolate bundt cake for dessert. (I bought it at Whole Foods this afternoon) There were candles and singing, and dark photos. Bummer. However, here is my little piece of cake.
Helen, Anna, thanks for being good sports, wearing the hats and participating in our silly celebration. That said, it may be silly, but life is far too short not to celebrate the little things in life that make us happy. Seize the day, and show your belly!!
