Still freezing cold here today, but no rain, so come along with me on the walk I took at lunch time. I get distracted by photo ops, so not sure how many activity points I earned, but hey, some is better than none. And fresh air, even when cold, is a good diversion in the workday.
I’m pretty sure you all earned an activity point by coming along on the walk with me!! :)
And today’s weight watchers menu? Breakfast was two pieces of Little Big Bread with 1 tbsp light cream cheese, a slice of ham and 1/4 avocado with balsamic reduction.
During the morning, I had a cup of blueberries with 1/2 cup greek yogurt.
My lunch after the walk was tuna salad (made with celery, 2 tsp light mayo and 2 tsp relish) on a bed of spinach, with cherry tomatoes, celery sticks, 10 (yup, I counted) crunchmaster crackers and an orange.
My afternoon snack was a pear.
When I got home from work, I had a serving of the “new to these parts” ranch pop chips.
And then….I had a second serving. However, I tracked them, and had lots of weekly points left, so no big deal.
Dinner tonight was beef stew, made with a little beef and a boatload of vegetables (onions, garlic, carrots, celery, green beans, peppers, mushrooms, nugget potatoes, kale) all simmered in beef broth, then thickened. I sprinkled some dried spinach on top for the photo.
Now, I have some prep to do for tomorrow, then the rest of the evening will be relaxing. Neva already has a “leg up” on us on that! :)
That doesn’t look comfortable, but it is to her. I guess… More tomorrow.
