Someone sent this to me today. I’m thinking there IS a silver lining to the cold cloud we’re under right now.

Yippee!!!!!
I have a new mascot to introduce you too as well. Meet “Bollywood Pig”. He came in the same bag as “KGB Pig” and he’s FANTASTIC! (well, in my mascot loving eyes)
He stood next to my breakfast today, which was greek yogurt with blueberries and 1 tbsp gingerbread granola, as well as a little pack of apple juice with vinegar.
During the morning, I had a half piece of low-fat banana bread (that I made yesterday) with coffee. I needed lots of coffee today.
I have to apologize for the HORRIBLE photo of lunch. Bollywood Pig looks fine, but the lunch itself…out of focus. Whoops! The fuzziness is a cup of lentil soup that I made yesterday, a mini naan bread, some roasted butternut squash with garam marsala and a honeycrisp apple.
During the afternoon, I had some kale chips (with chili/lime popcorn seasoning) and a tall non fat vanilla spice latte.
Dinner tonight was loosely based on a recipe from the Weight Watchers Points Plus Cookbook. The recipe in the book is “Thai Ginger Chicken Burgers”. Last night, I decided to make “Ginger Chicken Meatloaf” so we’d have a quick “heat and serve” dinner tonight.
In a food processor, I combined:
- 4 scallions
- 1 tbsp chopped peeled fresh ginger
- Approx 1 lb skinless, boneless chicken breasts
- 1/2 cup panko
- 1 red pepper
- 1 tbsp thai yellow curry paste
I put it all in a loaf pan and baked for about 50 minutes.
I served it with 2 tbsp sweet chili sauce, steamed green beans and some steamed mini potatoes (these are tiny, about the size of a large olive) that I “smashed” with 1 tsp light butter.
I’ll freeze the leftovers and we’ll have the rest when we need another quick dinner.
That’s it for Monday and I’ll sign off with yet another image from google.

Roz I love the variation in your meals every day, it’s every day a pleasure to see what you have come up with. I love your lunch by the way but since i can’t heat food at work I have to work with cold dishes.

I agree, shaving your legs is pointless in winter. I mean, ESPECIALLY when you’re married and not dating! lol

Your cartoon cracked me right up! It warmed up to the 50s here over the weekend so I felt obligated to shave my legs LOLOL!!!

I agree, it’s nice to not have to shave your legs as often in the winter…however, I was so glad I did, late last week, because it was hot on Saturday and I had to wear shorts for my run!

I love the chili sauce!! I use it to make Skinny bang bang shrimp – I don’t know if you have Bonefish grill in Vancouver, but this recipe tastes exactly like it.
