My day was VERY discombobulated, I was pulled in all kinds of different directions in all kinds of locations. Which unfortunately resulted in me not being in the right place at the right time to get to my weight watchers meeting. I’m REALLY sorry I didn’t have a chance to give our departing leader Jenn a hug to wish her well. An email this afternoon had to do, but Jenn, if you are reading this as well….I’m going to miss you!! Make sure you keep in touch! Jenn is a writer, so this “hug” is most appropriate for her (and her quill)!
Today’s breakfast was an english muffin with 1 tbsp almond butter and no-sugar jam and a big mug of chai tea. And yes, this IS a new mascot, the “Disco Dancing Penguin”!
Mid morning, I had some orange and grapefruit segments and my latest baking experiment – apple-craisin mini muffins.
Lunch was this couscous/chickpea salad I made the other night. It has (stating the obvious) couscous and chickpeas (HA!) as well as tomato, peppers, balsamic, fresh basil and a few olives. I literally threw it together with bits and pieces in the fridge and pantry that needed to be used up. In a word, yum. My taste buds were dancing like the penguin.
Later in the afternoon I had a pear and an oz of cheese.
Dennis and I had an appointment after work, so we sent out for dinner. (it was well past 8:00pm when we got home)
I had a few “Food Should Taste So Good” sweet potato chips with the Trader “Jose’s” green salsa to shut our stomachs up while we waited for delivery.
There is a restaurant not far from here - they make the BEST hummus in the world, as well as whole wheat pizza. I had 2 pieces of pizza with the edges dipped in hummus. So good. I think they either put EXTRA garlic, or is it roasted garlic….dunno, can’t pinpoint why it is so good, and when I ask, they won’t give up their hummus “secret”.
I’m going to close this off now, and get a couple of hours sleep. I know I’m a complete nerd, but I’m setting my alarm for 2:45am so I’m awake to watch the Royal Wedding live. I know…silly…but I have to do it. More on that tomorrow! (thank you for the animation Google Images!)
